A small marine Hermit Crab sits on top of new growth Irish Moss seaweed. Jelly-like carrageenan from Irish Moss Seaweed can be used as a vegan substitute for gelatin. Irish moss, or carrageen moss, is a red algae which grows abundantly on the rocky north Atlantic coastline.
